Roasted Cauliflower and Potato Salad

Ingredients:

1 head cauliflower, about 2lb, washed and cut into 1 inch pieces
1/3 C olive oil
5 large yellow potatoes, peeled, washed and cut into 1/2 inch pieces
2/3 C mayo
1 T mustard
1/2 small onion, finely minced
1/3 C parsley, finely chopped

salt and pepper, freshly ground

Directions:

Toss cauliflower in oil and season with salt.
Bake at 400F for 50 min, or until starting to brown. Cool.
Boil potatoes for 15 min, drain and cool.
Combine the rest of the ingredients and toss with cauliflower and potatoes.

Match made in Heaven:

Sausages on a bun.
