Russian Vinaigrette

Ingredients:

5 large white potatoes, boiled with skin on, cooled, peeled, 7mm diced
4 medium carrots, boiled with skin on, cooled, peeled, 7mm diced
4 medium beets, boiled with skin on, cooled, peeled, 7mm diced
3 medium dill pickles, 5mm diced
1 can sweet green peas (14 oz), drained
1 small white onion, diced
2 T olive oil
1 T apple cider vinegar
1 T sugar
salt and pepper
parsley, for garnish (optional)

Directions:

Mix all of the ingredients gently and chill for at least 1 hour before serving or overnight.

Match made in Heaven:

Served chilled is a great side to any cold cuts plate!
