Grilled Corn

few ears of corn
olive oil


Preheat the grill to medium-high.
Rub the corn with olive oil and sprinkle with salt.
Grill corn for 12 min turning 3-4 times, until lightly charred all the way around.

Husks On:
Preheat the grill to medium-high.
Pull the husks all the way and remove the silks.
Pull the husks back.
Soak the corn in cold water for 10-15 min.
Grill corn for 15 min turning 3-4 times, uncovered.

Match made in Heaven:

Once grilled, roll the corn in these topping combinations:
– crumbled cotija cheese, finely chopped chilies and cilantro
– mayo and horseradish, followed by rolling in shredded cheddar
– sour cream or mayo, sprinkle of fresh lime juice, chili powder, cotija or parmesan
