Grilled Vegetables

Ingredients:

1 eggplant, ends removed, sliced 7-10 mm thick
1 zucchini, ends removed, sliced 7-10 mm thick
1 portobello mushroom, cleaned, sliced 7-10 mm thick

Directions:

Preheat the grill on high.
Working in batches, place vegetables on the grill and press for 4 min.
Remove and let cool in a single layer.

Match made in Heaven:

Use this in a Grilled Vegetable Salad, or a Grilled Vegetable Sandwich.
