Italian Tomato Soup

Ingredients:

3 T olive oil
3 large garlic cloves, minced
1/3 C fresh basil, chopped
1.5 lbs ripe seeded tomatoes, peeled
3 slices white bread, toasted into croutons
2 C water
salt and ground pepper, freshly ground

Directions:

Satee garlic and herbs in olive oil until garlic begins to brown.
Stir in tomatoes, simmer for 20 min, stirring.
Add water. Simmer for 5 min.
Add salt and pepper.
Pour into bowls over croutons.
Garnish.

Match made in Heaven:

Glass of red.
