4 large yellow potatoes, diced
1 large leek
6 C water
green herbs for garnish, optional
In a large pot bring water, potatoes and salt to a gentle boil.
Thinly slice the leek. Sautee in butter until golden.
Add leaks to the pot and continue to simmer for 1 hour total.
With a hand blender, pure the vegetables until smooth.
Reheat, pour into bowls and sprinkle with favourite herbs and cayenne (optional).

Big chunk of freshly baked bread with butter.
