1 lb beef, ground, at room temperature
1 medium onion, diced
salt and pepper, freshly ground
2/3 C broth, at room temperature
3 C flour
1 T salt
1 T sugar
1 t baking powder
2 T olive oil
1/2 C cold water
1/2 C boiling water
olive oil for deep frying
Put beef in a large bowl.
Top with onions, then salt. Let sit for 10 minutes.
Add pepper and broth and mash with a potato masher for 5 min.
Mix flour, salt, sugar, baking powder in a separate bowl.
Mix in the waters.
Knead the dough, make into a log, and cut into 6 pieces.
Roll each piece out into a thin layer, making about 8-10 inches in diameter.
Divide meat into 6 parts.
Spread 1 part on a half of each pastry, fold the second half on top, and press sealed.
Deep fry or fry in a high edge skillet, filling it up 1/2-2/3 inches with oil.
Watch out for the hot stuff inside!
