Broccoli and Leek Soup

3 leeks, roots and tops trimmed, washed, finely chopped
2 lb broccoli, chopped into 2 cm pieces
3 T olive oil
5 C Chicken Broth
sour cream and finely chopped green onion for garnish


In a soup pot fry the broccoli and leeks in olive oil until leeks started to brown.
Add broth and simmer for 20 min.
Process with a hand blender until smooth. Add salt and reheat.
Garnish with sour cream and green onion.

Match made in Heaven:

Garlic bread, made from White Bread or top with some Garlic Croutons.
